- 1 cup flour
- 1 cup cornmeal enriched
- 1 cup evaporated milk
- 1/4 cup butter unsalted
- 1/4 cup sugar granulated
- 2 eggs
- 2-3 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/2 tsp. nutmeg grated
- 1 tsp. vanilla extract
- 1/4 tsp. salt
Sift flour, baking powder, and salt. Mix in the spices, sugar and cornmeal. Cut softened butter into pieces, and mix well.
Beat the eggs and add the milk and vanilla. Add the liquid to the dry ingredients and mix well. Beat until fluffy.
Pour in a greased dish and bake for about 20 minutes or until slightly brown.
