Alright, let’s get real here and try a Herb Crust Pizza. We all know that homemade pizza is the ultimate comfort food. And if you’re anything like me, you’ve probably tried every pizza recipe under the sun. But have you ever tried making a Trini herb crust pizza? No? Well, let me tell you, it’s a game-changer. Not only does it have all the usual herbs like oregano and basil, but it also has chadon beni – yes, you heard that right, chadon beni. And if you don’t know what chadon beni is, just imagine the love child of cilantro and parsley. It’s a herb that’s so unique to Trinidad, it should have its own passport.
Now, I know what you’re thinking. “But I don’t have chadon beni!” Fear not, my pizza-loving friends. You can easily find it at any local market or just steal some from your neighbor’s garden. Just kidding, don’t do that. But seriously, once you try this Trini herb crust pizza, you’ll never go back to your basic herb crust again. So grab your rolling pin and get ready to add some Trini flair to your pizza game.

Ingredients
- HERB CRUST DOUGH:
- 2 tbsp. 1 envelope yeast
- 1 1/2 cups water
- 4 cups flour
- 1 tsp. salt optional
- 2 leaves chadon beni finely chopped
- 1/2 tsp. thyme finely chopped
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2- 1 tsp. chive finely chopped
- 1/2 tsp. parsley
- 1/4 cup oil olive or coconut oil
- PIZZZA SAUCE:
- 1/4 cup tomato paste
- 1/2 cup tomato ketchup
- 1 tsp. fresh thyme
- 1 tsp. basil
- 1 tsp. grated garlic
- 2 tsp. grated onion
- 3 tsp. parsley
- 2 tsp. celery
- SUGGESTED TOPPINGS:
- 1 green pepper
- 1 tin yellow sweet corn
- 1 cup tomatoes
- 1 cup grated carrots
- 1/2 cup mushrooms
- 8 stuffed olives
- 2 cups grated cheese
- Sausage
- Note: Nutritional information includes the above ingredients excluding the sausage.
Instructions
- Sift the flour, add the herbs and the yeast. Mix the oil and water together and stir the liquid into the flour.
- Stir to a smooth dough. Knead the dough and allow it to rest for about 15 minutes. Divide into two and roll out into 28″ circles. Rest the dough into 35″ pizza pans.
- Spread the sauce evenly over the dough. Add the various toppings of your choice. (We added chopped onions, sweet peppers, tomatoes, corn, pimento and salami).
- Sprinkle cheese, lots of cheese, and bake for 25-30 minutes in a preheated oven at 230 degrees, or until golden brown.
