Tomato choka is a popular dish in Trinidad and Tobago, made from roasted or grilled tomatoes that are mashed and seasoned with herbs and spices. It is a simple yet flavorful dish that can be enjoyed as a snack or as a side dish with bread or rice. The dish is also a great way to use up ripe tomatoes that may be too soft for other recipes.
Tomato choka is traditionally prepared by placing whole tomatoes on a hot grill or in a hot oven until they are charred and softened. The skins are then peeled off and the flesh is mashed with a fork or potato masher. To this, chopped onions, garlic, green seasoning (a blend of herbs and spices commonly used in Caribbean cuisine), salt, and pepper are added for flavor. The dish can be served hot or cold and is a delicious and healthy addition to any meal.
