Saheena II

Saheena is a popular Trinidadian snack that is enjoyed by many locals and visitors. It is made from a combination of dasheen leaves, flour, and spices. There are many variations of saheena, and this is the second recipe we prepare. This saheena recipe is easier than the first because of the preparation and steps involved. However, the cooking time may be the same since we have to leave the mixture to “rest.”

The preparation of this saheena recipe is relatively straightforward. First, we combine the flour and spices in a bowl and mix them thoroughly. We then add the chopped dasheen leaves and mix the ingredients until they are well combined. After this, we leave the mixture to rest for a few hours to allow the flavors to meld together. This is where the cooking time may be the same as the first recipe since we have to wait for the mixture to rest. Once the mixture has rested, we can then begin cooking the saheena. We heat some oil in a frying pan and begin frying small balls of the mixture until they are golden brown. This process takes about 5 minutes per batch, and we repeat until all the mixture has been used up.

Ingredients

  • 6 dasheen leaves stems removed
  • 1 tsp. saffron tumeric powder
  • 1 tbsp. baking powder
  • 2 tsp. yeast
  • 1 1/2 cup split peas powder
  • 2 1/2 cups flour
  • 2 tsp. salt
  • 4 tbsp. green seasoning
  • 2 cups water
  • few drops of lime juice

Instructions

  • Fold the leaves and cut off where the stem joins to the leaf. Chop the dasheen leaves finely. Add the rest of ingredients.
  • (Note: Don’t forget the lime juice or else it will itch!). Mix thoroughly. Leave to rest for 1/2 an hour.
  • Heat the oil over a medium flame. Have a small bowl of water nearby. Dip your hands in the water, then pick up a bit of the dough and spread with your hands.
  • Fry until golden. Drain and serve with kuchela or chutney.
