Roast breadfruit and saltfish is a classic Caribbean dish that is loved for its simplicity and bold flavors. The dish is made by roasting a breadfruit until it is tender and then pairing it with salted codfish that has been rehydrated and cooked with onions, peppers, and other seasonings. The result is a dish that is both hearty and satisfying, perfect for a filling meal any time of day.
Breadfruit is a staple in many Caribbean countries and is often used in savory dishes as a potato or rice substitute. It has a starchy texture and a slightly sweet taste that pairs well with the saltiness of the codfish. Roasting the breadfruit gives it a crispy exterior and soft, fluffy interior that is perfect for absorbing the flavors of the salted codfish. Salted codfish, also known as saltfish, is a popular ingredient in Caribbean cuisine and is made by salting and drying fresh codfish. It has a strong, salty flavor that is balanced by the addition of onions, peppers, and other seasonings. The rehydration process softens the fish and removes some of the saltiness, making it perfect for pairing with the roasted breadfruit.
