Remember I told you not to throw away the pineapple skins in the last post. Well here in Trinidad we like to boil the pineapple skin to make a wonderful juice. It’s simple enough to follow without really writing a recipe.
All you need to do is cut off the top and bottom of the pineapple, then peel off the skin and cut it into small pieces. Put the skin in a pot with enough water to cover it and let it boil for about 20 to 30 minutes. Once the water has turned a lovely golden color, strain the liquid into a jug and let it cool. Voila! You’ve just made yourself some refreshing and healthy pineapple juice!
This simple recipe is a great way to use every part of the pineapple and avoid food waste. Plus, the health benefits of pineapple are numerous. - When cooled, sweeten to taste and strain again before bottling the juice and refrigerating it.
Notes
You can add pieces of pineapple to push the taste a bit.
