Ingredients
- 1 cup sugar
- 1 tsp. cinnamon
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs well beaten
- 1 tsp. vanilla
- 1 – 1 1/4 cups mango puree
- 1/2 cup chopped walnuts
- 1/2 cup raisins Optional
- 1/4 cup butter
- 2 cups flour
- 1/2 tsp. lime rind
- Cream Cheese frosting
- 1/4 cup of butter
- 1 cup cream cheese
- 2 cups icing sugar
Instructions
- Sift the flour. Mix flour, cinnamon, baking soda and salt. Set aside.
- Mix the mango puree, sugar and butter.
- Beat the egg.
- Add lime rind and vanilla.
- Mix the beaten eggs and mango mixture.
- Then combine all ingredients together.
- Mix well and pour into prepared 9″x11″ pan and let sit for 10 minutes. Bake at 350 degrees F for 40-45 minutes.
- Frost with a cream cheese frosting.
- To make the cream cheese frosting blend together 1/4 cup of butter, 1 cup cream cheese and about 2 cups icing sugar.

- 1 cup cream cheese
- 2 cups icing sugar
