Mango Cake

Mango cake is a truly delightful dessert that is loved by people of all ages. This cake is a fusion of the sweetness and tanginess of mangoes with the soft and moist texture of cake. The idea of making a cake with mangoes is not a new one, but it has gained immense popularity in recent years due to its unique and refreshing taste. The main ingredient of mango cake is, of course, mangoes.

The cake is made using fresh mango puree or pulp, which is mixed with flour, sugar, butter, and eggs to form a smooth batter. The batter is then baked in the oven until it rises and turns golden brown. Once the cake is ready, it is garnished with fresh mango slices, whipped cream, or frosting to enhance its flavor and appearance.

Ingredients

  • 1 cup sugar
  • 1 tsp. cinnamon
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs well beaten
  • 1 tsp. vanilla
  • 1 – 1 1/4 cups mango puree
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins Optional
  • 1/4 cup butter
  • 2 cups flour
  • 1/2 tsp. lime rind
  • Cream Cheese frosting
  • 1/4 cup of butter
  • 1 cup cream cheese
  • 2 cups icing sugar

Instructions

  • Sift the flour. Mix flour, cinnamon, baking soda and salt. Set aside.
  • Mix the mango puree, sugar and butter.
  • Beat the egg.
  • Add lime rind and vanilla.
  • Mix the beaten eggs and mango mixture.
  • Then combine all ingredients together.
  • Mix well and pour into prepared 9″x11″ pan and let sit for 10 minutes. Bake at 350 degrees F for 40-45 minutes.
  • Frost with a cream cheese frosting.
  • To make the cream cheese frosting blend together 1/4 cup of butter, 1 cup cream cheese and about 2 cups icing sugar.
