Course: Desserts

  • 1 1/2 cups all-purpose flour
  • 3 tbsp cornstarch
  • 3/4 tsp. baking powder
  • 3/4 tsp. salt
  • 5 1/2 tbsp. butter

  • 1 tsp. vanilla
  • 2 eggs
  • 3 tbsp. apple cider vinegar

  • In a deep bowl sift flour, soda and salt together twice. Set aside.
  • In a separate bowl, cream together the butter, honey, sugar and vanilla. Add eggs and beat until fluffy.
  • Add dry ingredients and vinegar, alternately beginning and ending with dry ingredients.
  • Beat well after each addition.
  • Pour into greased muffin pans or paper cups.
  • Note: Generally, each paper cup can hold about 2 tbsp of mixture.
  • Bake cupcakes for about 20 minutes in a moderate oven at 375 degrees F.
  • Leave to cool then frost as desired.

The cupcakes have a somewhat golden look because of the amount of honey used in this recipe. I found this to have a beautiful effect.
