This honey cupcake has far less sugar than a normal cupcake. These cupcakes are easy to prepare and you can choose to frost them anyway you which.

Ingredients
- 1 1/2 cups all-purpose flour
- 3 tbsp cornstarch
- 3/4 tsp. baking powder
- 3/4 tsp. salt
- 5 1/2 tbsp. butter
- 1/2 cup honey
- 1/4 cup granulated sugar
- 1 tsp. vanilla
- 2 eggs
- 3 tbsp. apple cider vinegar
Instructions
- In a deep bowl sift flour, soda and salt together twice. Set aside.
- In a separate bowl, cream together the butter, honey, sugar and vanilla. Add eggs and beat until fluffy.
- Add dry ingredients and vinegar, alternately beginning and ending with dry ingredients.
- Beat well after each addition.
- Pour into greased muffin pans or paper cups.
- Note: Generally, each paper cup can hold about 2 tbsp of mixture.
- Bake cupcakes for about 20 minutes in a moderate oven at 375 degrees F.
- Leave to cool then frost as desired.
Notes
The cupcakes have a somewhat golden look because of the amount of honey used in this recipe. I found this to have a beautiful effect.
