I always enjoy drinking this green fig punch. n Trinidad and Tobago, the term “punch” is commonly used to describe a non-alcoholic milk-based drink that is flavoured with a variety of ingredients. It is a popular beverage throughout the country and can be found in many local cafes and restaurants. Typically served cold, punches come in a variety of flavours including peanut, mauby, soursop, and ginger.
The preparation of a punch varies depending on the flavour and recipe. Some punches are made with condensed milk, evaporated milk, and sugar, while others may use coconut milk or even soy milk as the base. Additional ingredients such as nuts, fruits, and spices are added to create unique and distinct flavours. Punches are a refreshing and delicious drink, perfect for hot days or as a complement to a spicy meal. They are a quintessential part of Trinidadian cuisine and culture.

Ingredients
- 4 – 5 medium green figs bananas see note
- Water for boiling fig
- 1 tin 395 g Condensed milk
- 4 – 5 cups water
- 1/2 tsp. nutmeg or spice powder
- 1/2 tsp. Angostura Bitters
- 1 cinnamon stick or 1/4 tsp. cinnamon powder
Instructions
- Place green fig in a deep pot with water and bring to boil. Remove from fire when the fig skin turns brown. Drain and peel.
- In a blender, puree ingredients (fig, milk, water, nutmeg or spice powder, and bitters) until smooth. Pour out in a drinking glass with ice cubes. Garnish with bitters and cinnamon stick.
- Note: First blend four (4) figs (bananas)in the mixture. You may add the 5th if you desire a thicker punch.
