There are some vegetables that I did not like while growing up and, without a doubt, Caraili was one of them. It was bitter, and tasted awful. However, if you try fry caraili you’d soon learn to enjoy this vegetable and gain the many healthful benefits it can offer. To make this recipe, you will need fresh caraili, a few spices, and a touch of creativity. First, slice the caraili into thin rounds and toss them in a bowl with a pinch of salt. Let the slices sit for a few minutes to release some of the bitterness.
Tip: To add some flavor to these little rounds of goodness. Sprinkle on some cumin, chili powder, and a squeeze of fresh lime juice. Toss the caraili

- 2 cloves garlic
- 1 small onion

Instructions
- Chop the Caraili into rings. Cut up the pimento peppers, onion and garlic and set aside. In a frying pan, over a medium flame, heat the oil. Add the chopped onions etc. and saute until golden brown.
- Add the chopped caraili rings and mix in with the seasoning. Add salt and pepper to taste.
