Time and time again, I just marvel at the simplicity of our cooking here in Trinidad and Tobago. With just a few ingredients we could whip up a tasty meal very quickly. To me, it seems like a common thread amongst all the cultures that inhabit the island. Fry Cabbage is a simple yet delicious dish that is easy to prepare and can be enjoyed as a side dish or a main course. Cabbage, being a cruciferous vegetable, is a great source of vitamins and minerals such as vitamin C, K, and folate. It is also low in calories, making it a great addition to a healthy diet.

Ingredients
- 1/2 medium cabbage chopped
- 3 cloves garlic chopped
- 1 small onion chopped
- 2 tbsp. oil
- Salt to taste optional
- Pepper to taste optional
- Water
Instructions
- In a medium sized pot, over a medium flame, saute the onion and garlic until golden brown. Add the cabbage
- Mix up the cabbage until it is evenly coated with the oil and allow to fry a bit turning ever so often. Add salt and pepper to taste. You may need to add a little water to prevent burning.
- When the cabbage has a light brown colour, it is ready. Adjust salt and pepper and serve hot with bake.
