Honey Cupcakes

Serves: 12 cupcakes.
  • 1½ cups all-purpose flour
  • 3 tbsp cornstarch
  • ¾ tsp. baking powder
  • ¾ tsp. salt
  • 5½ tbsp. butter
  • ½ cup honey
  • ¼ cup granulated sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 3 tbsp. apple cider vinegar
  1. In a deep bowl sift flour, soda and salt together twice. Set aside.
  2. In a separate bowl, cream together the butter, honey, sugar and vanilla. Add eggs and beat until fluffy.
  3. Add dry ingredients and vinegar, alternately beginning and ending with dry ingredients.
  4. Beat well after each addition.
  5. Pour into greased muffin pans or paper cups.
  6. Note: Generally, each paper cup can hold about 2 tbsp of mixture.
  7. Bake cupcakes for about 20 minutes in a moderate oven at 375 degrees F.
  8. Leave to cool then frost as desired.
The cupcakes have a somewhat golden look because of the amount of honey used in this recipe.
