Corn Cakes - (Cachapas)

  • 5 cups corn kernels
  • 1 tbsp. sugar
  • 2 tbsp. milk
  • 1 pinch salt
  • Butter for sautéing
  1. Puree all the ingredients in a blender. Heat griddle to medium heat, lightly coat with butter.
  2. Spoon mixture onto hot griddle to form "pancakes" for desired size.
  3. Cook for 2 minutes on each side, until sides of pancake become golden brown.
