Ingredients

  • 1 cup flour
  • 1 cup cornmeal enriched
  • 1 cup evaporated milk
  • 1/4 cup butter unsalted
  • 1/4 cup sugar granulated
  • 2 eggs
  • 2-3 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. nutmeg grated
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt

Instructions

  • Sift flour, baking powder, and salt. Mix in the spices, sugar and cornmeal. Cut softened butter into pieces, and mix well.
  • Beat the eggs and add the milk and vanilla. Add the liquid to the dry ingredients and mix well. Beat until fluffy.
  • Pour in a greased dish and bake for about 20 minutes or until slightly brown.
