Ingredients

  • 2 ozs. Butter unsalted
  • ½ cups sugar granulated
  • 1 egg lightly beaten
  • ½ tsp bitters
  • 1 tsp. vanilla extract
  • 3 cups flour
  • 3 tsp baking powder
  • 2 tsp cinnamon
  • ½ cup raisins seedless
  • 2 cups finely grated coconut

Instructions

  1. Preheat oven to 350°F.
  2. Cream the butter and sugar until smooth. Add egg, bitters and vanilla; beat well.
  3. In a separate bowl, combine the flour, baking powder, and cinnamon. Add coconut and raisins.
  4. Pour the liquid mixture into the dry ingredients and mix well. Add a little bit of water if necessary to moisten the batter. (However, the batter should be firm enough to hold their shape while baking).
