Coconut bake is a traditional Caribbean dish that is enjoyed by many, including my father-in-law. The aroma of freshly baked coconut is a common occurrence in our household, as my wife is always ready to oblige her father’s request for some coconut bake. Despite the occasional inconvenience, I have come to appreciate and respect his love for this dish.
As a son-in-law, I have learned the importance of respecting and honoring family traditions and preferences. In this case, my father-in-law’s love for coconut bake has become a cherished family tradition. Although it may seem like a small request, I understand that it is a symbol of his appreciation for my wife’s culinary skills and his love for his family. As such, I am happy to support this tradition and enjoy the delicious coconut bake alongside him.

Ingredients
- 2 cups flour
- ¾ tsp salt
- 4 tsp baking powder
- 2 tbsp. melted butter. unsalted or olive oil
- ¾ cup grated coconut
- 2 tbsp. sugar
- ¾ cup milk
Instructions
- Sift flour, salt, baking powder into bowl. In a separate bowl mix the grated coconut and sugar then add the coconut mixture to the sifted flour. Add the milk and butter or oil.
- Knead for about 5 minutes or until you get a smooth dough like in the picture. Cover and let rise for 10 minutes.
- Using a rolling pin, shape dough into a circle (3/4 -1 inch thick) and place in a greased baking tin, round or square. Prick top of the bake with fork to decorate.
- Bake in a moderate oven (about 250 degrees F ) for 20 minutes or until light brown. Allow to cool.

The recipe says let rise. Am I supposed to add yeast for it to rise? and if so how much?
the baking powder in the recipe will be enough to do the trick.
