The Most Delicious Carrot Cake

This carrot cake is a rich cake that would not make you feel guilty.

  • 2 cups all purpose flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1/2 tsp. nutmeg
  • 2 cups brown sugar
  • 1 cup olive oil
  • 4 eggs
  • 8 oz. crushed pineapple
  • 2 cups grated carrot
  • 1/2 cup choppped nuts walnuts, peanuts, and/ or almonds
  • 1/2 tsp. grated orange rind


  • Sift together the flour, baking powder and baking soda. Add the cinnamon, nutmeg and sugar. Add the oil and beat well.
  • Beat well until the batter is light. Add one egg at a time, beat well until the batter is light and fluffy.
  • Blend in the grated carrots. Then the nuts. Bake at 375 F in one or 2 tins for 30 to 35 minutes or until done.
