Divali, also known as the Festival of Lights, is one of the most important festivals in Hinduism. It is celebrated annually in autumn and marks the victory of good over evil, light over darkness, and knowledge over ignorance. The festival is observed by Hindus, Sikhs, and Jains worldwide and is a time for family gatherings, feasting, and the exchange of gifts.
One of the most popular sweet treats that is enjoyed during the Divali celebrations is barfi. Made from condensed milk, sugar, and nuts, barfi has a soft, fudgy texture and a sweet, nutty flavor. It is often garnished with silver or gold leaf and served in small, bite-sized pieces. Barfi is a beloved treat not only during Divali but also during other festive occasions such as weddings, birthdays, and religious ceremonies. Its popularity has led to many different variations, such as coconut barfi, almond barfi, and pistachio barfi, among others.

Ingredients
- 3 cups full cream milk powder
- 3/4 tin Nestle Cream 170g
- 2 1/2 cup granulated sugar
- 2 tbsp. grated ginger
- 1/2 cup water
- 1 tsp. ground Elychee cardamom
- Candy sprinkles optional
Instructions
- Mix the milk and cream…until it starts to develop a dry crumbly texture. (Note: It would take a bit of mixing to bring it to this stage). Then sift the mixture through a fine sieve or strainer.
- Grease a baking dish and add some sprinkles.
- Bring to a boil the water, sugar, ginger, and cardamom. (The sugar has to be reduced right before it spins a thread, which could be anywhere from 8 to 10 minutes).
- Pour over the milk and mix quickly. Then place in the greased dish and press with your hands.
- Add more sprinkles on the top. Cut into squares before it cools.
