Barbecue Chicken: Smoky Flavor and Juicy Perfection

Barbecue chicken is a beloved dish that has been a staple in many households for generations. While it’s traditionally cooked on an outdoor grill, there are several ways to cook it indoors, including using an oven grill. This cooking method allows for a delicious and juicy chicken that’s bursting with flavor, just like the one my mom makes. The secret to achieving that perfect flavor is in the marinade. My mom’s recipe uses a blend of spices that are commonly found in Trinidadian cuisine, giving it a unique twist on a classic dish.

The chicken is marinated for several hours before being grilled in the oven, allowing the flavors to fully permeate the meat. The result is a tender, juicy chicken that’s packed with flavor and sure to satisfy any palate. Whether it’s for a family dinner or a summer barbecue, this oven-grilled barbecue chicken is sure to be a hit with everyone at the table.

Prep Time: 20 minutes 

Cook Time: 1 hour 30 minutes 

Total Time: 1 hour 50 minutes

Ingredients

  • 7 pieces Leg and Thigh or Breast and Wing seasoned and marinated
  • 2 1/2 cups barbecue sauce divided

Instructions

  1. Parboil the chicken for approximately 5 minutes and save the stock.
  2. Mix 1/2 cup of chicken stock and 1/2 cup of barbecue sauce and reduce for 1 1/2 minutes. This is for preliminary basting.
  3. Put the pieces of chicken in a pan for easy basting. When done place the chicken in the oven on the grill side.
  4. Periodically turn and baste the chicken with the remaining cup of barbecue sauce until it is well done. This can take about 1 1/2 hours.
