Masala Mango – Savor the Sweet and Spicy Delight

The mango is a very versatile fruit when it comes to trini cooking as you have seen in previous posts. Today I’m going to show you another way of cooking mango. Masala mango is basically mango with masala in it… sounds simple enough, right? But trust me, the flavor explosion that happens in your mouth will leave you wanting more! First, you’ll need to pick the perfect mango for this dish.

Look for a ripe, juicy, and sweet mango – preferably a carrie mango because they are the best for masala mango! Cut the mango into bite-sized pieces and add in your favorite Trinidadian masala spices. You can use a pre-made masala blend or make your own by mixing turmeric, cumin, coriander, and chili powder together. Once you’ve coated the mango in the masala spices, it’s time to let the flavors meld together. You can let it sit for a few minutes or even overnight in the fridge.

Ingredients

  • 10 Julie Mangoes peeled and cubed
  • 9 tbsp Amchar masala
  • 1/4 lb. granulated sugar
  • 2 bunches garlic 2 heads, chopped
  • Hot pepper chopped
  • 2 tbsp oil
  • Water
  • Salt to taste 1/2 tsp.
  • Pepper to taste about 1 tsp.

Instructions

  • Boil the mango for about 15 minutes, drain and add salt, sugar and amchar masala. Mix thoroughly.
  • In a large pot, add the garlic to saute. Add the hot pepper then put in the mango. Mix and add more salt if needed.
  • Add water and allow to simmer until it forms a thick paste. Remove and cool before serving.
