Fry-tastic: The Art and Science of Perfecting French Fries

Achieving perfectly crispy french fries can be a challenge, especially when using traditional methods that involve high heat and lots of oil. However, with the right technique and a few adjustments, it is possible to make french fries that are both crispy and less oily. One key factor is to start with the right type of potato, such as Russet or Yukon Gold, which have a higher starch content that helps create a crispy exterior.

Another important step is to soak the cut potatoes in cold water for at least 30 minutes before frying. This helps remove excess starch and moisture from the surface, which can cause the fries to become soggy. When it comes to frying, using a lower temperature (around 325°F) and frying in small batches can also help achieve a crispy texture without excessive oil absorption.   • 6 medium potatoes
  • Oil for frying
  • Salt to taste

Instructions

  • Peel and cut up the potato into sticks. Not too thick though! Wash the potato three times. Add cold water and ice cubes to the potato. Refrigerate for an hour.
  • Drain the water and dry the french fries with a kitchen towel or cloth.
  • Put the potato in a large pot. Add the oil (enough to cover the french fries). Now light the stove and keep the flame low. Keep the flame low and allow the the potatoes to take their time to fry.
  • While the french fries are frying do not disturb it. This could result in breaking the french fry. Only interfere with them when they float.
  • Fry until golden brown. Drain on paper towels and sprinkle a little salt to taste.
